Ingredients

  • 1) Coconut oil
  • 2) Cod
  • 3) Slivered almonds 
  • 4) Nutritional yeast (I like to use this to replace certain flours as the nutty, cheesy, savory flavor it provides is vegan, sugar free, and contains an abundance of nutrients, specifically B-vitamins, folic acid, selenium, zinc, and protein). 
  • 5) 1 egg 
  • 6) 1/2 cup milk 
  • 7) Cayenne pepper, salt, pepper 

Directions

  • 1) Mix egg and milk up and place fresh cod fillets in bowl to coat. Leave for 5-10 minutes 
  • 2) Pour enough coconut oil in pan so theres roughly 1/2 inch layer for fish to fry in 
  • 3) Crumble up the slivered almonds on a plate and sprinkle some nutritional yeast into the mix
  • 4) Take fish out of marinade and dip into dry mix. Coat both sides evenly and turn on pan to heat up 
  • 5) Lightly fry both sides for 3-4 minutes on low/med heat so you down’t burn one side and cook fish all the way through, depending of course on the thickness of the fillet 
  • 6) Once fish looks flakey and white, take out of pan and lay on paper towel to allow excess oil to drip off
