Ingredients- Egg White Scramble

  • 1) Egg whites
  • 2) Mushrooms
  • 3) Zucchini
  • 4) Broccoli
  • 5) Orange Pepper

Ingredients- Porridge

  • 1) Rolled Oats
  • 2) 1 banana
  • 3) Cinnamon
  • 4) Vanilla extract
  • 5) Salt and a packet of stevia

Directions- Egg White Scramble

  • I start by chopping up broccoli, zucchini, mushrooms, and orange pepper if I have all into small little chunks
  • Start frying then add the kale or whatever greens you have and like to use
  • I use a carton of egg whites so I generally don’t know how many egg whites I end up using. Usually I’ll get a full plates worth but the mix definitely heavy on the vegetables. More like sautéed veggies with a side of egg whites I’d say 🙂
  • Once finished I top with pepper, garlic salt and some ketchup!

Directions- Porridge

  • I usually use around half a cup of rolled oats, heat it up in the microwave with a few shakes of fine grain sea salt then mix in 1 whole banana once it’s out of the microwave (You can cook the banana in the microwave which will blend in nicely and make the porridge a lot sweeter. I don’t do this as I like to have some of the chunky banana not melted in)
  • I’ll then add a lot of cinnamon, a splash of vanilla extract and some more salt. I recently started adding more salt as I found it enhanced all the other flavors of the dish. Top with a packet of stevia for extra sweetness
