Ingredients

  • 1) 1 pound lean fat free (or as fat free as you can get) ground turkey meat
  • 2) Chopped onion (white or yellow)
  • 3) 3 chopped garlic cloves
  • 4) Basil, oregano, smoked paprika, garlic powder, garlic salt, red pepper flakes
  • 5) 1-2 Zucchinis
  • 6) Mushrooms
  • 7) 1 can of tomato sauce (with as little sugar, try and find one with 45 cals per half cup)

Directions

  • Chop up your onion and garlic and start pan frying on low heat (make sure to grease up your pan so the garlic doesn’t burn)
  • Start browning your turkey meat on medium heat and stir it up so it’s in small little chunks
  • Add caramelized onion and garlic to browned turkey meat and then add your can of tomato sauce. (You can of course make your own sauce with crushed tomatoes, tomato paste etc. but I didn’t’ have all those ingredients)
  • Add mushrooms and all the spices you desire; I used basil, smoked paprika, oregano, garlic powder, garlic salt, some red pepper flakes and 1 packet of stevia (although my boyfriend thought this made it all too sweet and could’ve done without it… but I liked it!)
  • Let it all sauté up while you peel your zucchini with a julienne peeler. You won’t need to cook these, they will come out limp like a noodle
  • Add your sauce on top of noodles, shred up some fresh basil to top (I like to use a lot!) and add any more sea salt/garlic salt you feel you need
