Ingredients
- Egg whites (I never measure, I just buy the cartons and fill the pan with however much I feel like)
- Mushrooms
- Zucchini
- Green pepper or broccoli or both
- White onions if you like
- Kale or any other greens I have in the fridge
- 1/4 Avocado
Directions
- Cut up mushrooms, zucchini, onions and broccoli and start frying in olive oil sprayed pan
- Add some garlic salt, pepper and continue to fry
- Pour in desired amount of egg whites either from carton or egg shells
- You can either let bake for a while and keep the edges from sticking and then swirling the egg whites around so they cook evenly, then when almost done cooking put whole pan in the oven on broil until the top gets fully cooked
- OR you can mix the whites and veggies around in pan and make an egg white scramble thats more fluffy than the ‘frittata’
- Either way, slide out when done and put on plate. Top with more salt, pepper and avocado
