• Chicken breast
  • 1-2 large zucchinis
  • Non fat mozzarella cheese
  • Cherry tomatoes
  • Garlic powder, lemon juice, salt, garlic salt, pepper


  • Preheat oven to 425F and top chicken with lots lemon juice, garlic salt, some pepper, and garlic powder
  • Bake chicken breast (or breasts) for 20-25 minutes.
  • While chicken is baking, grate up zucchini using veggie spiralizer or julienne peeler
  • Place raw zucchini noodles in pan and fry with some lemon juice, salt, pepper and garlic powder just to make them a bit hot (they don’t need to cook and will be fine if you want them just peeled without frying for a couple minutes)
  • Place zucchini noodles on plate and top with cheese while hot so it melts a bit and then add chicken and some cut up cherry tomatoes to complete meal
