Ingredients – Tuna Salad

  • 1) 1 can tuna packed in water
  • 2) A good amount of chunky salsa (make sure it has no sugar)
  • 3) Some mixed greens
  • 4) Caramelized onions
  • 5) Taco Seasoning (Sprinkle a couple tbs on top)
  • 6) Any other veggies you’d like, sometimes I add chopped bell peppers
  • 7) Sometimes I add chopped up bread and butter pickles (it sounds disgusting but it works!)

Ingredients – Side baked veggie medley

  • 1) 1/2 bell pepper
  • 2) 1/2 Zucchini
  • 3) 1/2 Onion


  • I start frying my veggies and then combine the tuna and mixed greens
  • While veggies are cooking I will add salsa to tuna salad, sprinkle in some taco seasoning and then top with veggies
  • I will then mix it all up, add however much garlic salt I need as well as taco seasoning
  • For my vegetables, I liked to change up the medley all the time
  • Whatever they may be, I usually just spray with olive oil, cover in garlic salt (from Trader Joes) and bake on 450 for approximately 15 mins depending on whats baking, how brown I want them
  • Generally the longer, more brown they are the more flavor they will have
